Mango Bean Salad
Ingredients
- 1 large avocado
- 1 can of black beans
- 1 can of pinto beans
- 1 can of corn kernels
- 1 ripe mango
- 2 limes, juiced
- cilantro to taste
- salt and pepper to taste
- jalapeño (optional)
Preparation
Open your cans of beans and corn. Drain and rinse thoroughly. Add to your mixing bowl
Cut open your mango and dice into small bite-sized pieces. I also have used frozen mango because it’s always sweet. Just defrost in warm water. Add mango to bowl
Cut the stems of the cilantro and add the cilantro leaves to the bowl. I usually just use my hands for this process instead of a knife
Cut open and dice your avocado last to avoid getting the black spots, dice and add to bowl along with the juice of two limes and mix everything together. Add jalapeños or hot sauce if desired! I normally add tapatío ?
