Arugula Salad with Pomegranate, Walnuts & Pears: Lemon Balsamic Vinaigrette

Ingredients

  • Arugula
  • Pomegranate seeds
  • Walnuts
  • Sliced pears
  • Micro greens
  • Red onion
  • Juice from two lemons
  • 1 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • 2 cloves minced garlic
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Preparation

  1. Mix arugula, pomegranate seeds, walnuts, sliced pears, micro greens, and red onion in a large bowl and set aside.

  2. Prepare the vinaigrette by combining the juice from two lemons, 1 tbsp balsamic vinegar, 1/4 cup olive oil, 2 cloves minced garlic, 1/2 tsp salt, and 1/2 tsp ground black pepper in a separate large bowl.

  3. Slowly stream in the olive oil while whisking the vinaigrette ingredients together until well blended.

  4. Pour the prepared vinaigrette over the salad mixture in the large bowl.

  5. Toss the salad gently to ensure even coating of the dressing.

  6. Serve the arugula salad immediately for the best flavor and freshness.
