Lemon Basil Three Bean Salad
Ingredients
- 1, 15oz can chickpeas, rinsed and drained
- 1, 15oz can white beans, rinsed and drained
- 1, 15oz can black beans, rinsed and drained
- 1/4 medium red onion, minced
- 3 cloves garlic, crushed or minced
- 1 cup cherry tomatoes, quartered or halved
- Zest of one lemon
- 1/4 cup fresh basil, minced
- 2 tbsp extra virgin olive oil (optional)
- Juice of two lemons
- 1/2 tsp garlic powder
- 1/4 tsp salt or more to taste
- Fresh cracked black pepper to taste
Preparation
In a bowl, combine chickpeas, white beans, and black beans.
Add minced red onion and crushed/minced garlic to the beans.
Mix in quartered or halved cherry tomatoes.
Add lemon zest and finely minced fresh basil to the mixture.
Squeeze in the juice of two lemons.
If desired, add 2 tbsp of extra virgin olive oil.
Sprinkle garlic powder over the mixture.
Season with salt and freshly cracked black pepper to taste.
Toss everything together until all ingredients are fully combined.
Cover the bowl and allow the salad to marinate in the fridge for at least an hour before serving.
