Kale Salad Wrap
Ingredients
- 2 tsp of extra virgin olive oil.
- juice from 1/2 lemon
- salt, pepper to taste.
- 4-5 large kale leaves, stems removed and chopped
- 1/2 medium red onion sliced thinly
- 2 cloves of garlic minced
- 2 tsp of extra virgin olive oil
- Juice from 1/2 lemon
- Salt, pepper to taste
Preparation
Massage kale with olive oil and lemon juice, until is tender
Add onions, garlic, salt and pepper
Add 1/2 cup of roasted chickpeas, and roasted potatoes
Take spinach tortilla and warm up in a pan on both sides for 20 seconds
Take the the spinach tortilla, spread 1 tbsp of hummus and add the kale salad with chickpeas and sweet potatoes
Don’t over fill it
Carefully fold the wrap like a burrito
Cut it in half and enjoy
