Kale Salad Wrap

Ingredients

  • 2 tsp of extra virgin olive oil.
  • juice from 1/2 lemon
  • salt, pepper to taste.
  • 4-5 large kale leaves, stems removed and chopped
  • 1/2 medium red onion sliced thinly
  • 2 cloves of garlic minced
  • 2 tsp of extra virgin olive oil
  • Juice from 1/2 lemon
  • Salt, pepper to taste

Preparation

  1. Massage kale with olive oil and lemon juice, until is tender

  2. Add onions, garlic, salt and pepper

  3. Add 1/2 cup of roasted chickpeas, and roasted potatoes

  4. Take spinach tortilla and warm up in a pan on both sides for 20 seconds

  5. Take the the spinach tortilla, spread 1 tbsp of hummus and add the kale salad with chickpeas and sweet potatoes

  6. Don’t over fill it

  7. Carefully fold the wrap like a burrito

  8. Cut it in half and enjoy
