Carrot, Coriander & Lentil Soup with Hidden Courgette
Ingredients
- 1 red onion, chopped
- 1 tablespoon olive oil
- 5 cloves garlic, finely chopped
- 2 tsp cumin seeds
- Large handful of coriander, chopped
- 2/3 cup red lentils, washed & soaked for 1 hour or overnight
- 400g carrots, roughly chopped
- 1-2 courgettes
- 1 low salt stock cube
- Salt to taste
Preparation
In a pot, heat olive oil and sauté the chopped red onion until softened.
Add the finely chopped garlic and cumin seeds. Mix for 1 minute until fragrant.
Add the chopped coriander, red lentils, roughly chopped carrots, and sliced courgettes to the pot.
Dissolve the low salt stock cube in boiling water and pour it over the vegetables to cover them.
Bring the mixture to a boil, then lower the heat and cover with a lid. Let it simmer on low-medium heat until the lentils are soft and fully cooked.
Once everything is cooked, blend the mixture until smooth.
Season with salt according to taste.
