Rainbow Salad with Lemon Poppy Yogurt Dressing

Ingredients

  • 2 large handfuls leafy greens
  • shredded carrots
  • red cabbage
  • tomatoes
  • cucumbers
  • red onion
  • pumpkin & hemp seeds
  • avocado

Dressing

  • 3 tablespoons plant-based yogurt
  • 1 tablespoon olive oil
  • juice from 1/2 lemon
  • 1 teaspoon poppy seeds
  • salt & pepper, to taste

Preparation

  1. Prepare the salad ingredients by washing and chopping vegetables as needed.

  2. Assemble the salad by combining leafy greens, shredded carrots, red cabbage, tomatoes, cucumbers, red onion, pumpkin and hemp seeds, and avocado in a large bowl.

  3. In a small bowl, whisk together the plant-based yogurt, olive oil, lemon juice, poppy seeds, salt, and pepper.

  4. Drizzle the dressing over the assembled salad.
