Healthy Beet Quinoa Salad with Pomegranate

Ingredients

  • 1 small beet, roasted peeled or boiled and cut
  • 1 cup cooked quinoa
  • 1/2 cup cooked chickpeas or canned
  • 1/4-1/2 cup pomegranate seeds
  • 2-3 tablespoons sunflower seeds
  • Salt and pepper
  • Drizzle of olive oil
  • Drizzle of balsamic vinegar

Preparation

  1. Place all ingredients into a serving bowl.

  2. Drizzle with olive oil and balsamic vinegar.

  3. Season with salt and pepper.
