Healthy Beet Quinoa Salad with Pomegranate
Ingredients
- 1 small beet, roasted peeled or boiled and cut
- 1 cup cooked quinoa
- 1/2 cup cooked chickpeas or canned
- 1/4-1/2 cup pomegranate seeds
- 2-3 tablespoons sunflower seeds
- Salt and pepper
- Drizzle of olive oil
- Drizzle of balsamic vinegar
Preparation
Place all ingredients into a serving bowl.
Drizzle with olive oil and balsamic vinegar.
Season with salt and pepper.
