Cabbage and Brussels Sprouts Slaw with Mayo
Ingredients
- 1/4 medium cabbage
- 10-12 brussels sprouts
- 1 large carrot
- 1 generous handful sunflower seeds
- 1/2 firm pear
- 1 handful dried apricots
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Sea salt
Vegan mayo mixture
- 1/3 cup vegan mayonnaise
- 1/2 garlic clove
- 1 1/2 tablespoons lemon juice
- Sea salt
Preparation
Place sliced cabbage in a large bowl with 1 tablespoon olive oil, 1 tablespoon lemon juice, and a pinch of salt.
Massage the cabbage for about 3 minutes.
Add the remaining ingredients: brussels sprout leaves, julienned carrot, sunflower seeds, matchstick-cut pear, and chopped dried apricots. Toss to combine and set aside.
Mix the mayo ingredients together: vegan mayonnaise, minced garlic, lemon juice, and sea salt.
Drizzle the mayo mixture over the slaw and toss to combine.
