Cabbage and Brussels Sprouts Slaw with Mayo

Ingredients

  • 1/4 medium cabbage
  • 10-12 brussels sprouts
  • 1 large carrot
  • 1 generous handful sunflower seeds
  • 1/2 firm pear
  • 1 handful dried apricots
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Sea salt

Vegan mayo mixture

  • 1/3 cup vegan mayonnaise
  • 1/2 garlic clove
  • 1 1/2 tablespoons lemon juice
  • Sea salt

Preparation

  1. Place sliced cabbage in a large bowl with 1 tablespoon olive oil, 1 tablespoon lemon juice, and a pinch of salt.

  2. Massage the cabbage for about 3 minutes.

  3. Add the remaining ingredients: brussels sprout leaves, julienned carrot, sunflower seeds, matchstick-cut pear, and chopped dried apricots. Toss to combine and set aside.

  4. Mix the mayo ingredients together: vegan mayonnaise, minced garlic, lemon juice, and sea salt.

  5. Drizzle the mayo mixture over the slaw and toss to combine.
