Brown Rice with Black Beans and Garlicky Tomatoes
Ingredients
- 1 cup dry brown rice
- 1 pint cherry tomatoes
- 3-4 cloves garlic
- olive oil
- salt
- 1.5 cups cooked black beans
- juice and zest of 1 lime
Preparation
Preheat oven to 425 degrees.
Cook brown rice according to package.
When finished cooking, allow to cool for 15+ minutes.
Fluff with a fork, add to mixing bowl.
While rice cooks, roast tomatoes.
On a baking sheet combine cherry tomatoes, garlic, a couple big pinches salt and 1 tbs olive oil.
Roast in 425 degree oven until tomatoes begin to burst/caramelize and the garlic is soft, 25 minutes, give or take.
Mix cooked rice, black beans, lime juice and lime zest.
Add tomato/garlic mixture, gently toss to combine.
Season with salt, to taste.
