Brown Rice with Black Beans and Garlicky Tomatoes

Ingredients

  • 1 cup dry brown rice
  • 1 pint cherry tomatoes
  • 3-4 cloves garlic
  • olive oil
  • salt
  • 1.5 cups cooked black beans
  • juice and zest of 1 lime

Preparation

  1. Preheat oven to 425 degrees.

  2. Cook brown rice according to package.

  3. When finished cooking, allow to cool for 15+ minutes.

  4. Fluff with a fork, add to mixing bowl.

  5. While rice cooks, roast tomatoes.

  6. On a baking sheet combine cherry tomatoes, garlic, a couple big pinches salt and 1 tbs olive oil.

  7. Roast in 425 degree oven until tomatoes begin to burst/caramelize and the garlic is soft, 25 minutes, give or take.

  8. Mix cooked rice, black beans, lime juice and lime zest.

  9. Add tomato/garlic mixture, gently toss to combine.

  10. Season with salt, to taste.
