Light Aromatic Lemon Basil Quinoa Salad

Ingredients

  • 2 cups cooked quinoa, cooled
  • 1 handful fresh basil, chopped
  • 1 cup cucumber, chopped
  • 1/2 cup green onion, sliced
  • 2 tbsp olive oil
  • Juice from one and a half large lemons
  • 1/4 tbsp onion powder
  • A pinch of salt & pepper
  • A pinch of crushed red chilli pepper (optional)

Preparation

  1. After quinoa has cooled to room temperature, toss all ingredients together and mix well.

  2. Refrigerate for an hour to allow flavors to absorb and infuse.
