Egg, Potato, and Beetroot Salad

Ingredients

  • Waxy new potatoes, boiled
  • Eggs, boiled
  • Cooked beetroot
  • Lettuce
  • Rocket
  • Spring onion
  • Cucumber
  • Cherry tomatoes
  • Capers
  • Extra virgin olive oil, lemon juice, and salt for dressing

Preparation

  1. Boil the waxy new potatoes until tender

  2. Boil the eggs to desired doneness

  3. Prepare the dressing by whisking extra virgin olive oil, lemon juice, and salt together

  4. Chop the lettuce, rocket, spring onion, cucumber, and cherry tomatoes as needed

  5. Assemble all ingredients in a large bowl and toss with the dressing

  6. Serve the salad, optionally with bread and kalamata olives on the side
