Vegan Watermelon Avocado Mint Feta Salad

Ingredients

  • 1 small seedless watermelon, diced (~ 6 cups)
  • 1 avocado, diced
  • 1/3 cup thinly sliced red onion
  • 1/2 cup fresh mint, diced
  • 1/2 cup vegan feta cheese, diced

Dressing

  • 2.5 tablespoons extra virgin olive oil
  • 2 limes, juiced
  • 1 teaspoon pure maple syrup
  • 1 small garlic clove, minced
  • 1/4 teaspoon fine salt

Preparation

  1. Chill watermelon and avocado in advance.

  2. Divide ingredients between 2 plates and serve as a salad or put all in one serving bowl and serve as a side dish.
