Superfood Salad with Avocado and Quinoa
Ingredients

- spinach
- shredded Brussels sprouts
- quinoa
- cherry tomatoes
- roasted sweet potatoes
- pickled red onion
- chia seeds
- flaxseed crunch
- avo dressing
Preparation
Prepare roasted sweet potatoes by preheating oven to 200°C, chopping sweet potatoes, tossing with oil, and roasting for 20-25 minutes until tender
If not store-bought, make pickled red onion by slicing onion and soaking in vinegar mixture for at least 30 minutes
Cook quinoa according to package instructions until fluffy
Wash and chop kale, spinach, and Brussels sprouts as needed
Prepare avo dressing by blending avocado with desired seasonings, such as lemon juice and oil
In a large bowl, combine all ingredients and toss with the avo dressing to mix well
