Avocado, Currant and Kale Salad

Ingredients

  • kale
  • 1/2 avocado
  • juice of 1/2 lemon
  • large pinch of salt
  • currant and sour cherry sourdough
  • chilli oil
  • cherry tomatoes
  • hemp seeds
  • cashew parmesan
  • carrot sticks
  • roasted red pepper hummus

Preparation

  1. Massage the kale with avocado, lemon juice, and salt for 5 minutes.

  2. While massaging the kale, slice the sourdough bread, drizzle with chilli oil, and bake in the oven until golden.

  3. Assemble the salad by adding cherry tomatoes, hemp seeds, cashew parmesan, carrot sticks, and roasted red pepper hummus.

  4. Optionally, add lentils for additional protein to increase the nutritional value.
