Nourishing Bowl with Blackberries, Avocado, and Chickpeas
Ingredients
- 1 can chickpeas, rinsed and drained
- 1/2 tsp adobo
- 1/4 tsp chipotle powder
- Salt and pepper to taste
- Red lettuce
- Minced basil
- Sliced cherry tomatoes
- Avocado
- Blackberries
- Hemp seeds
- Fruit infused vinegar or balsamic vinegar
Preparation
Place chickpeas in a bowl and dab with a clean towel or paper towel to remove excess moisture.
Add seasonings (1/2 tsp adobo, 1/4 tsp chipotle powder, salt and pepper) and toss together.
Cook chickpeas in an air fryer at 370F for 15 minutes or in an oven preheated to 400F: roast for 10 minutes, stir halfway, and roast for an additional 10-15 minutes.
Allow chickpeas to cool completely so they crisp up.
Serve with red lettuce, minced basil, sliced cherry tomatoes, avocado, blackberries, and hemp seeds.
Drizzle with a little fruit infused vinegar or balsamic vinegar and enjoy.
