Nourishing Bowl with Blackberries, Avocado, and Chickpeas

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/2 tsp adobo
  • 1/4 tsp chipotle powder
  • Salt and pepper to taste
  • Red lettuce
  • Minced basil
  • Sliced cherry tomatoes
  • Avocado
  • Blackberries
  • Hemp seeds
  • Fruit infused vinegar or balsamic vinegar

Preparation

  1. Place chickpeas in a bowl and dab with a clean towel or paper towel to remove excess moisture.

  2. Add seasonings (1/2 tsp adobo, 1/4 tsp chipotle powder, salt and pepper) and toss together.

  3. Cook chickpeas in an air fryer at 370F for 15 minutes or in an oven preheated to 400F: roast for 10 minutes, stir halfway, and roast for an additional 10-15 minutes.

  4. Allow chickpeas to cool completely so they crisp up.

  5. Serve with red lettuce, minced basil, sliced cherry tomatoes, avocado, blackberries, and hemp seeds.

  6. Drizzle with a little fruit infused vinegar or balsamic vinegar and enjoy.
