Sweet Potato and Avocado Bowl Lunch
Ingredients
- sweet potatoes
- coconut oil
- salt
- 1 fresh sliced avocado
- fresh organic rainbow chard
- seasoning of your choice
- chickpeas
- olives
- vegan Parmesan dressing
Preparation
Air fry sweet potatoes for 16 minutes at 400°F.
Sprinkle coconut oil and salt on the sweet potatoes.
Add sliced avocado.
Sauté rainbow chard with seasoning of your choice for 3 minutes.
Add chickpeas, olives, and a side of vegan dressing.
