Sweet Potato and Avocado Bowl Lunch

Ingredients

  • sweet potatoes
  • coconut oil
  • salt
  • 1 fresh sliced avocado
  • fresh organic rainbow chard
  • seasoning of your choice
  • chickpeas
  • olives
  • vegan Parmesan dressing

Preparation

  1. Air fry sweet potatoes for 16 minutes at 400°F.

  2. Sprinkle coconut oil and salt on the sweet potatoes.

  3. Add sliced avocado.

  4. Sauté rainbow chard with seasoning of your choice for 3 minutes.

  5. Add chickpeas, olives, and a side of vegan dressing.

  6. Enjoy your healthy and delicious lunch.
