Quickest Ever Cheats Chilli

Ingredients

  • 1 can chopped tomatoes
  • 1 large carrot, peeled and chopped
  • 1/2 can chickpeas, washed and drained
  • 1/2 can black beans, washed and drained
  • pinch of chilli powder
  • pinch of cumin
  • pinch of medium curry powder
  • salt and pepper

Preparation

  1. Place all ingredients into a saucepan or frying pan, bring to boil and simmer until thickened, adjusting spices to taste.

  2. Serve with iceberg lettuce, sweetcorn, smashed avocado with lime, pesto hummus, vegan tikka chicken, and optionally dip with tortilla chips.
