Loaded Bean Stew with Vegetables and Potatoes
Ingredients
- 1 large carrot
- 1 can of chickpeas
- 1 can of white beans
- 4 dl green beans
- 2 dl frozen spinach
- 2 dl frozen kale
- 250 g cherry tomatoes
- 390 g tomato sauce with basil
- 400 ml water
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
Preparation
Dump all the ingredients in a pot and let everything heat up.
Let the stew simmer on medium heat for 30 minutes.
Serve with whatever you like, such as potatoes and more vegetables.
