Loaded Bean Stew with Vegetables and Potatoes

Ingredients

  • 1 large carrot
  • 1 can of chickpeas
  • 1 can of white beans
  • 4 dl green beans
  • 2 dl frozen spinach
  • 2 dl frozen kale
  • 250 g cherry tomatoes
  • 390 g tomato sauce with basil
  • 400 ml water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme

Preparation

  1. Dump all the ingredients in a pot and let everything heat up.

  2. Let the stew simmer on medium heat for 30 minutes.

  3. Serve with whatever you like, such as potatoes and more vegetables.
