Smoky Sweet Sautéed Chickpeas
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 small red onion, diced
- 1/2 cup sliced mushrooms
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp thyme
- 2 tsp tamari or regular soy sauce
- 2 tsp liquid sweetener like maple syrup
- salt & Pepper to taste
- veggies of choice: I used one small diced roasted beet and a small diced carrot
Preparation
Add mushrooms and onions to a sauté pan and allow to cook and brown to soften, about 3 minutes
Add in chickpeas, carrots and beets and seasonings
Sauté, allowing carrots to cook for at least 3 minutes
Add tamari and maple syrup
Sauté together allowing flavor to infuse into the chickpeas and veggies
Once liquid has cooked off, about 3-4 minutes and veggies look evenly coated and caramelized, remove from heat
Serve immediately with rice and some dressing
