Smoky Sweet Sautéed Chickpeas

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 small red onion, diced
  • 1/2 cup sliced mushrooms
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 2 tsp tamari or regular soy sauce
  • 2 tsp liquid sweetener like maple syrup
  • salt & Pepper to taste
  • veggies of choice: I used one small diced roasted beet and a small diced carrot

Preparation

  1. Add mushrooms and onions to a sauté pan and allow to cook and brown to soften, about 3 minutes

  2. Add in chickpeas, carrots and beets and seasonings

  3. Sauté, allowing carrots to cook for at least 3 minutes

  4. Add tamari and maple syrup

  5. Sauté together allowing flavor to infuse into the chickpeas and veggies

  6. Once liquid has cooked off, about 3-4 minutes and veggies look evenly coated and caramelized, remove from heat

  7. Serve immediately with rice and some dressing
