Black Bean Zucchini Stew
Ingredients
- 1 tablespoon olive oil
- 1 white onion, finely chopped
- 2 carrots, peeled and diced
- 1 can diced tomatoes
- 1 red pepper, diced
- 3 tablespoons tomato paste
- 1 large zucchini, diced
- 1 can organic black beans
- 1 teaspoon oregano
- salt and pepper, to taste
- fresh parsley, for garnishing
Preparation
In a large pot heat oil over medium heat, add onions and cook for a couple of minutes.
Add the rest of the ingredients and cover the pot.
Cook for 30 minutes until all the vegetables are soft.
Serve warm, garnished with fresh parsley.
