Black Bean Zucchini Stew

Ingredients

  • 1 tablespoon olive oil
  • 1 white onion, finely chopped
  • 2 carrots, peeled and diced
  • 1 can diced tomatoes
  • 1 red pepper, diced
  • 3 tablespoons tomato paste
  • 1 large zucchini, diced
  • 1 can organic black beans
  • 1 teaspoon oregano
  • salt and pepper, to taste
  • fresh parsley, for garnishing

Preparation

  1. In a large pot heat oil over medium heat, add onions and cook for a couple of minutes.

  2. Add the rest of the ingredients and cover the pot.

  3. Cook for 30 minutes until all the vegetables are soft.

  4. Serve warm, garnished with fresh parsley.
