Gluten-Free Creamy Vegan Pasta
Ingredients
- Gluten-free pasta
- 2 cups mushrooms
- 2 cups chopped zucchini
- 1 cup diced shallots
- 1/2 cup finely chopped garlic
- Olive oil
- Salt
- Pepper
- Fresh basil
- Oregano
- Silken tofu or vegan cream
Preparation
Sauté the olive oil and seasonings.
Add garlic and shallots.
Once browned, add mushrooms and zucchini.
While the vegetables are cooking, combine silken tofu, a bit of water, and herbs in the blender.
Add the blended mixture to the saucepan.
Cook everything until the aroma fills the kitchen and everything is well cooked.
Blend the mixture.
Mix with the pasta, which should be made either just before or ready halfway through preparing the sauce.
Serve and enjoy.
