Fried Cauliflower Pasta

Ingredients

  • cauliflower
  • brown rice pasta
  • balsamic vinegar
  • pine nuts
  • garlic clove
  • olive oil
  • vegan cashew parm (optional)
  • red chili flakes (optional)
  • pepper

Preparation

  1. Cut up cauliflower into small pieces add to a non stick pan with 2 tbsp of water

  2. Cook on low med heat with the lid on

  3. You want to steam it, if it’s sticking add more water as needed

  4. Once cauliflower is soften and fork tender, remove lid and let water evaporate

  5. Finely chop up garlic and add it to the pan

  6. Add a a drizzle of olive oil and splash of balsamic vinegar

  7. Turn heat to high and fry

  8. Once cauliflower has absorbed the oil and vinegar add pine nuts, red chili flakes and cooked pasta

  9. Let the pine nuts toast for a bit

  10. Add some more balsamic vinegar if you think it needs some more

  11. Top off with cashew parm and fresh black pepper
