Penne with Artichokes and Spinach in White Wine Sauce
Ingredients
- 1/2 lb pasta of your choice
- 2 tbsp olive oil
- 1/2 onion finely chopped
- 3 cloves minced garlic
- 3/4 cup white wine (sub for veggie broth if desired)
- 1 pint cherry or grape tomatoes sliced in half
- 1.5 cups roasted peppers, drained and chopped
- 1 1/4 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp each dried basil and oregano
- 1 to 2 cups (packed) baby spinach (preference on amount)
- 1 cup marinated artichokes, drained and chopped into small pieces
- Red chili flakes for serving (optional)
Preparation
Cook pasta until just barely al dente. Drain and drizzle with a touch of olive oil.
Meanwhile, in a large pan, add oil and onions. Cook until translucent, stirring often.
Add garlic, salt, pepper, dried basil and oregano, and cook for another minute.
Add wine and simmer for 2 minutes.
Add tomatoes and peppers, and let cook until wine is reduced by about half.
Add drained pasta, artichokes, and baby spinach.
Stir, cover with lid, heat on low, and cook for 2 to 3 minutes until spinach is wilted, stirring periodically. Enjoy!
