Vindaloo Inspired Chickpea Cauliflower Curry

Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 2 cups diced cauliflower
  • 1/2 white onion, diced
  • 2 tbsp minced garlic
  • 1 inch, fresh ginger minced
  • 1 15oz can crushed tomatoes
  • 1/2 cup coconut milk
  • 2 tsp maple syrup or sweetener of choice
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1/2 tsp ground mustard seed
  • 1/4 tsp turmeric
  • 1/4 cardamom
  • pinch of cinnamon
  • pinch of clove
  • 1 cup vegetable broth
  • salt and pepper to taste

Preparation

  1. Add onion to a pan and sauté until softened

  2. Add in garlic and ginger and sauté until fragrant, about 2 minutes

  3. Add in spices and crushed tomatoes

  4. Stir to combine and allow to cook for 2 minutes before adding remaining ingredients

  5. Stir to combine and bring to a low simmer, and cook for about 20-25 minutes

  6. Add salt and pepper to taste then enjoy
