Chickpea Tahini Stew Bowl

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 can diced tomatoes
  • 1/2 cup sliced mushrooms
  • 1 small spanish onion, diced
  • 1 tbsp minced garlic
  • 1 red bell pepper, diced
  • 1 tbsp ketchup
  • 2 tsp italian seasoning
  • 2 tsp smoked paprika
  • 3 tbsp tahini
  • 1 cup water
  • Salt to taste

Preparation

  1. Start by adding the mushrooms and onions to a large sauce pan and sauté until softened, 3 minutes. Add garlic and peppers and sauté until fragrant, about 2 minutes. Add remaining ingredients and bring to a boil then reduce to a simmer and cook for about 15 minutes or until Stew thickens. Serve as desired. Also goes well with a squeeze of lemon juice
