Chickpea Tahini Stew Bowl
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 can diced tomatoes
- 1/2 cup sliced mushrooms
- 1 small spanish onion, diced
- 1 tbsp minced garlic
- 1 red bell pepper, diced
- 1 tbsp ketchup
- 2 tsp italian seasoning
- 2 tsp smoked paprika
- 3 tbsp tahini
- 1 cup water
- Salt to taste
Preparation
Start by adding the mushrooms and onions to a large sauce pan and sauté until softened, 3 minutes. Add garlic and peppers and sauté until fragrant, about 2 minutes. Add remaining ingredients and bring to a boil then reduce to a simmer and cook for about 15 minutes or until Stew thickens. Serve as desired. Also goes well with a squeeze of lemon juice
