Rainbow Fusion Peasant Salad with Creamy Vegan Greek Dressing
Ingredients
- -1T vegan plain yogurt
- juice of half a lemon
- 3T olive oil
- 2T champagne or white vinegar
- 2 tsp pure maple syrup
- 1tsp fresh mint chopped and 1/2 tsp dry oregano
- pinch of salt and fresh ground black pepper
