Roasted the Courgettes

Ingredients

  • courgettes
  • lemon
  • salt

Preparation

  1. Today roasted the courgettes instead of boiling them and it got a unanimous thumbs up from the family

  2. To roast the courgettes cut into thick slices, coat with a little olive oil and salt and bake in a preheated oven for about 45 minutes turning halfway

  3. I then mixed it through some simply boiled black eye peas, and dressed with lemon and salt

  4. Louvi is lovely hot but also makes a perfect salad so if you have any leftovers, add a whole bunch of veg and you have a gorgeous salad
