Roasted the Courgettes
Ingredients

- lemon
- salt
Preparation
Today roasted the courgettes instead of boiling them and it got a unanimous thumbs up from the family
To roast the courgettes cut into thick slices, coat with a little olive oil and salt and bake in a preheated oven for about 45 minutes turning halfway
I then mixed it through some simply boiled black eye peas, and dressed with lemon and salt
Louvi is lovely hot but also makes a perfect salad so if you have any leftovers, add a whole bunch of veg and you have a gorgeous salad
