Trout with Roasted Squash and Cucumber Dill Salad
Ingredients
- 2 tbsp Greek yogurt
- 2 tsp creamed horseradish
- 1 tbsp finely chopped fresh dill
- 2 tbsp capers
- 1/2 red onion
- 1/2 cucumber
- 1/2 lemon juice
- Lettuce (lamb's lettuce or choice)
- Handful baby tomatoes
- 400g butternut squash
- trout fillets
Preparation
Mix all cucumber dill dressing ingredients together in a bowl.
Serve with the other ingredients. Simple!
