Beet and Lentil Salad with Fresh Veggies

Ingredients

  • Farmer’s market greens
  • Purple cabbage
  • Cucumber
  • Parsley
  • Lentils
  • Yellow beets
  • Lemon juice
  • Tahini

Preparation

  1. Roast or grill washed beets until tender, then peel off skin while still warm and slice for salads.

  2. Steam lentils until soft

  3. Chop purple cabbage, cucumber, and parsley into bite-sized pieces

  4. Mix lemon juice and tahini together to make a simple dressing

  5. Assemble all ingredients in a jar or bowl, starting with greens and adding other components, then top with dressing
