Vegan Black Bean Avocado Salad Bowl
Ingredients
- 2 cans of black beans
- 1 can of corn kernels
- 3-4 ripe avocados
- 2 jalapeños (optional, or substitute bell pepper)
- 3/4 cup cilantro
- 1 medium red onion
- 1 cup cherry tomatoes
- Juice of 4-5 limes
- Salt and pepper to taste
Preparation
Drain and rinse the black beans and corn kernels.
Chop the avocados, jalapeños if using, red onion, and cilantro.
Halve the cherry tomatoes.
In a large bowl, combine all the prepared ingredients.
Drizzle with lime juice and season with salt and pepper to taste.
Toss gently to mix and serve immediately.
