Protein-Packed Black Bean Salad

Ingredients

  • 1/2-3/4 cup black beans
  • 1/2 cup corn kernels
  • 1/2 cup diced tomato
  • 1/4 cup diced jalapeños (optional)
  • 1/2 avocado diced
  • 1/4-1/2 cup hummus
  • Cilantro to taste
  • Lime or lemon juice
  • Salt and pepper to taste

Preparation

  1. Season the black beans with lime juice and salt. Also season the corn kernels.

  2. Layer all the ingredients as desired.

Notes

  1. Homemade hummus is preferred, but store-bought or vegan sour cream can be used as a substitute.
