Fresh Vegan Taco Salad
Ingredients
- 3 cups of chopped spinach
- 1 cup black beans
- 1/2 cup grape tomatoes sliced
- 1 can of corn
- 1 Avocado sliced
- 1 small lime
- 1/4 of an onion sliced
- 1 Tbsp curry powder
- 1 Tbsp taco seasoning
- 1 Tbsp chopped cilantro
- 2 Tbsp avocado oil or butter
- 3 Tbsp salsa
- 2 tsp vegan sour cream/ regular sour cream
- salt and pepper to taste
Preparation
Add 1 Tbsp of avocado oil to your pan and place on medium heat.
Sauté the canned corn until it’s slightly toasted.
Add curry powder, squeeze some lime, salt and pepper and set aside.
Add another tbsp of avocado oil to your pan and keep it on medium heat.
Sauté your black beans.
Add taco seasoning, 2 tbsp of water, stir, and set aside.
Toss everything to a bowl and add your fresh spinach, grape tomatoes, avocado, cilantro and onions.
Add some hot salsa or mild and some vegan sour cream/ regular sour cream.
Optional toppings
Top with vegan cheese or regular cheddar cheese!
