Crunch Supreme Wraps with Tofu and Veggies

Ingredients

  • 16 oz extra firm tofu
  • 2 tbs olive oil
  • 1 tbs tomato paste
  • 1 tbs adobo paste
  • 1/2 tsp cumin
  • Juice of 1 lime
  • 1/4 cup chopped cilantro

Accompaniments

  • 1/2 cup black beans
  • 1/2 cup corn
  • Handful spinach
  • Vegan shredded cheese

Preparation

  1. Break the tofu apart with your hands.

  2. Place olive oil, tofu, tomato paste, adobo paste and cumin in a pan on medium-low heat. Mix well and cook for 5 minutes.

  3. Add lime juice and cilantro. Cook for 5-7 minutes.

  4. Add to tortilla.

  5. Serve with black beans, spinach, vegan cheese and corn.

  6. Enjoy.
