Crunch Supreme Wraps with Tofu and Veggies
Ingredients
- 16 oz extra firm tofu
- 2 tbs olive oil
- 1 tbs tomato paste
- 1 tbs adobo paste
- 1/2 tsp cumin
- Juice of 1 lime
- 1/4 cup chopped cilantro
Accompaniments
- 1/2 cup black beans
- 1/2 cup corn
- Handful spinach
- Vegan shredded cheese
Preparation
Break the tofu apart with your hands.
Place olive oil, tofu, tomato paste, adobo paste and cumin in a pan on medium-low heat. Mix well and cook for 5 minutes.
Add lime juice and cilantro. Cook for 5-7 minutes.
Add to tortilla.
Serve with black beans, spinach, vegan cheese and corn.
Enjoy.
