Firecracker Tofu Lettuce Wraps
Ingredients
Sauce
- 1/2 cup peanut butter
- 1/3 cup low sodium soy sauce
- 1/3 cup sesame oil
- 1/4 cup rice vinegar
- 2 tablespoons chili paste (like sambal oelek)
- 2 tablespoons sugar
- a small knob of fresh ginger, peeled
- a clove of fresh garlic, peeled
Main
- Tofu
- Rice noodles
Lettuce and toppings
- Lettuce leaves
- Peanuts
- Cilantro
- Scallions
- Lime
- Sriracha
Preparation
Blend all sauce ingredients in a food processor or blender until smooth.
Cut the tofu into pieces and sauté in a pan until crispy, then add half of the sauce and cook until it crisps up; set aside.
Soak rice noodles in hot water until soft.
Add a little more oil to the pan, add the soaked rice noodles and the rest of the sauce, and toss for a few minutes.
Toss the noodles with the tofu mixture.
Roll the mixture in lettuce leaves.
Top with peanuts, cilantro, scallions, lime, and/or sriracha as desired.
Tips
Add more chili paste for increased spiciness.
All toppings are optional and can be adjusted to taste.
