Firecracker Tofu Lettuce Wraps

Ingredients

Sauce

  • 1/2 cup peanut butter
  • 1/3 cup low sodium soy sauce
  • 1/3 cup sesame oil
  • 1/4 cup rice vinegar
  • 2 tablespoons chili paste (like sambal oelek)
  • 2 tablespoons sugar
  • a small knob of fresh ginger, peeled
  • a clove of fresh garlic, peeled

Main

  • Tofu
  • Rice noodles

Lettuce and toppings

  • Lettuce leaves
  • Peanuts
  • Cilantro
  • Scallions
  • Lime
  • Sriracha

Preparation

  1. Blend all sauce ingredients in a food processor or blender until smooth.

  2. Cut the tofu into pieces and sauté in a pan until crispy, then add half of the sauce and cook until it crisps up; set aside.

  3. Soak rice noodles in hot water until soft.

  4. Add a little more oil to the pan, add the soaked rice noodles and the rest of the sauce, and toss for a few minutes.

  5. Toss the noodles with the tofu mixture.

  6. Roll the mixture in lettuce leaves.

  7. Top with peanuts, cilantro, scallions, lime, and/or sriracha as desired.

Tips

  1. Add more chili paste for increased spiciness.

  2. All toppings are optional and can be adjusted to taste.
