Stir-Fried Tofu with Noodles

Ingredients

  • 450g firm tofu, cubed
  • 200g noodles of your choice
  • 2 tbsp cornflour or cornstarch
  • 2-3 tbsp oil
  • 1 tsp baking soda

Sauce

  • 2 tbsp soy sauce or tamari
  • 2 tsp sesame oil
  • 2 tsp rice vinegar
  • 2 tsp maple syrup or brown sugar
  • 1 tbsp fresh ginger
  • 1/2 tsp red chili flakes
  • 1 tbsp peanut butter (optional, or tahini or seed butter)

Preparation

  1. In a bowl, mix all the sauce ingredients together and set aside.

  2. Toss the cubed tofu with cornflour and baking soda until evenly coated.

  3. Heat oil in a large skillet or wok over medium-high heat.

  4. Add the coated tofu and cook until golden and crispy on all sides.

  5. Cook the noodles according to package instructions and drain.

  6. Add the cooked noodles and sauce to the skillet with the tofu.

  7. Stir everything together and heat until well combined and hot throughout.

  8. Serve immediately.
