Crispy Shaved Tofu Stir Fry Bowl

Ingredients

  • 200g firm tofu

Sauce

  • 3 tbsp creamy peanut butter
  • 1-2 tsp Sriracha (adjust for heat preference)
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup or honey (optional, for sweetness)
  • 2-3 tbsp water (to thin)

Vegetables and garnishes

  • 2 garlic cloves, minced
  • 1 small broccoli or bunch of broccolini, chopped
  • 1 large capsicum, chopped
  • cooked rice, for serving
  • fresh coriander, for serving
  • sesame seeds, for serving
  • chilli flakes, for serving

Preparation

  1. Shave tofu into thin strips using a vegetable peeler.

  2. Make the sauce by combining all the ingredients in a bowl until smooth.

  3. Place the shaved tofu into the sauce and shake the bowl to coat evenly. Set aside.

  4. In a frying pan, heat oil over medium heat and add garlic.

  5. Cook for a couple of minutes.

  6. Add broccoli, capsicum and season to taste.

  7. Cook for 10 minutes or until the vegetables are tender.

  8. Place shaved tofu slices into a sandwich press and cook for one minute or until crispy and golden brown. Alternatively, air fry it.

  9. Arrange a bowl with cooked rice, stir-fried vegetables and top with crispy shaved tofu.

  10. Drizzle the remaining peanut sauce over the top and garnish with fresh coriander, sesame seeds and chilli flakes.
