Crispy Shaved Tofu Stir Fry Bowl
Ingredients
- 200g firm tofu
Sauce
- 3 tbsp creamy peanut butter
- 1-2 tsp Sriracha (adjust for heat preference)
- 2 tbsp rice vinegar
- 2 tbsp soy sauce or tamari
- 1 tbsp maple syrup or honey (optional, for sweetness)
- 2-3 tbsp water (to thin)
Vegetables and garnishes
- 2 garlic cloves, minced
- 1 small broccoli or bunch of broccolini, chopped
- 1 large capsicum, chopped
- cooked rice, for serving
- fresh coriander, for serving
- sesame seeds, for serving
- chilli flakes, for serving
Preparation
Shave tofu into thin strips using a vegetable peeler.
Make the sauce by combining all the ingredients in a bowl until smooth.
Place the shaved tofu into the sauce and shake the bowl to coat evenly. Set aside.
In a frying pan, heat oil over medium heat and add garlic.
Cook for a couple of minutes.
Add broccoli, capsicum and season to taste.
Cook for 10 minutes or until the vegetables are tender.
Place shaved tofu slices into a sandwich press and cook for one minute or until crispy and golden brown. Alternatively, air fry it.
Arrange a bowl with cooked rice, stir-fried vegetables and top with crispy shaved tofu.
Drizzle the remaining peanut sauce over the top and garnish with fresh coriander, sesame seeds and chilli flakes.
