Marinated Tempeh Stir-Fry with Sauce

Ingredients

  • 1-8 oz block tempeh
  • Neutral flavored oil (for frying)

Marinade

  • 5 tbsp rice vinegar
  • 1/3 cup tamari or soy sauce
  • 1.5 tsp toasted sesame oil
  • 2 tsp maple syrup
  • 0.75 tsp chili paste or sriracha

Sauce

  • 2 minced garlic cloves
  • 1 tbsp finely chopped ginger
  • 1 tsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1/4 cup soy sauce or tamari
  • 1 tbsp sriracha
  • 1 tsp maple syrup
  • 1/4 cup water
  • 1 tbsp cornstarch

Preparation

  1. Gently boil the tempeh block for about 4 minutes, then drain and let it cool.

  2. Mix the marinade ingredients together.

  3. Cut the tempeh into thin rectangles or triangles and place it in a flat dish to soak in the marinade for 15 minutes.

  4. Meanwhile, prepare the sauce by combining its ingredients.

  5. Pan fry the marinated tempeh slices in a little neutral flavored oil in a non-stick skillet until golden brown on both sides, about 3 minutes per side, then remove the tempeh from the skillet.

  6. Add the sauce to the skillet and heat while mixing until it starts to thicken, then return the tempeh to the skillet and toss it in the sauce to coat. You can also mix in some sautéed mushrooms if desired.
