Sticky Spicy Tofu Quinoa Bowl

Ingredients

  • 250g quinoa
  • 1 head broccoli
  • 1 tbsp veg stock powder
  • 1 block firm tofu
  • corn flour (for dusting)

Sauce

  • 1 tbsp gochujang sauce
  • juice and zest of 1 orange
  • 1 tbsp agave syrup
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1/2 tsp corn flour
  • tahini
  • sesame seeds

Preparation

  1. Cook quinoa according to package instructions, using veg stock powder for flavor.

  2. Prepare broccoli by cutting into florets and steaming or boiling until tender.

  3. Dust tofu with corn flour and fry in a pan until crispy and golden.

  4. In a separate bowl, combine gochujang sauce, orange juice and zest, agave syrup, rice vinegar, soy sauce, corn flour, and tahini to make the sticky-spicy sauce.

  5. Assemble the dish by placing cooked quinoa in a bowl, top with broccoli and crispy tofu, then drizzle with the sauce and sprinkle sesame seeds.

Tips

  1. This dish is ideal for Meatless Monday and pairs well with a side of greens.

  2. Adjust the spice level by adding more or less gochujang sauce to suit your taste.
