Spicy Peanut Tofu Poke Bowl

Ingredients

  • 1 tablespoon olive oil
  • 250 g firm tofu, cut into cubes
  • 1 teaspoon sesame seeds

For the sauce

  • 1 teaspoon minced ginger
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon sriracha (optional for the spicy kick)
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons peanut butter
  • 2 tablespoons lime juice
  • 1/4 cup coconut sugar

To assemble the Bowl

  • Cooked quinoa (or brown rice)
  • Broad beans (or edamame)
  • Avocado slices
  • Carrot strips
  • Pickled red cabbage

Preparation

  1. Make the sauce by whisking all the sauce ingredients together until smooth or blending them.

  2. Heat olive oil in a frying pan over medium heat and add tofu. Cook for 7 minutes or until tofu is golden brown.

  3. Add the peanut sauce into the pan and toss until combined. Cook on low heat for a couple of minutes.

  4. Assemble the poke bowl with cooked quinoa or brown rice, broad beans or edamame, avocado slices, carrot strips, and pickled red cabbage.

  5. Sprinkle sesame seeds over the bowl.

  6. Serve and enjoy!
