Quick Tofu Noodle Stir-Fry

Ingredients

  • 450g firm tofu, cubed
  • 200g noodles of your choice
  • 2 tbsp cornflour or cornstarch
  • 2-3 tbsp oil
  • 1 tsp baking soda

Sauce

  • 2 tbsp soy sauce or tamari
  • 2 tsp sesame oil
  • 2 tsp rice vinegar
  • 2 tsp maple syrup or brown sugar
  • 1 tbsp fresh ginger
  • 1/2 tsp red chilli flakes
  • 1 tbsp peanut butter (optional, or tahini or seed butter)

Preparation

  1. In a large bowl or sealed container, add the tofu and cornflour and shake or mix to cover the tofu.

  2. In a frying pan on medium high heat, add some oil and once hot, add the tofu and fry for 2 minutes on each side, keeping an eye to avoid burning.

  3. Meanwhile, bring water to a boil, add the noodles, and cook according to package instructions. For an 'eggy' flavor, add 1-2 tsp baking soda while cooking.

  4. Drain the noodles, then remove the frying pan from heat and add the noodles to the tofu.

  5. In a small bowl, mix together the sauce ingredients, then pour over the noodle and tofu mixture and stir to combine.

Tips

  1. You can add extra vegetables like spinach, peas, broccoli, mushrooms, or peppers after the tofu is crispy.

  2. For serving, add ribboned carrot, toasted peanuts, fresh coriander or cilantro, and pickled red onion. Tofu can be replaced with chickpeas, tempeh, or mushrooms.
