Sweet Chili Tofu and Peppers with Noodles

Ingredients

  • 3 to 4 servings noodles

Sweet chili tofu & peppers

  • 8 oz. super firm or extra firm tofu
  • 1 bell pepper thinly sliced
  • 2 tsp oil for cooking

Sauce

  • 1 tsp garlic powder
  • 1 tsp chili garlic sauce
  • 1/4 cup sweet chili sauce
  • 2 tsp soy sauce or tamari
  • 3 or 4 cloves garlic
  • 1/2 tsp onion powder

Noodles sauce

  • 1/2 cup vegetable stock
  • 2 tsp sesame oil
  • 1-2 tsp chili garlic
  • 1 tbsp hoisin sauce
  • 1 tbsp dark soy sauce
  • 1 tsp onion powder
  • 1/2 tbsp rice vinegar
  • 2 tsp maple syrup

Preparation

  1. Cook udon noodles according to package directions, careful not to overcook.

  2. Meanwhile, in a large pan, brown the tofu in a bit of oil until golden brown, flipping every 5 minutes or so and season with salt and garlic powder, then remove and set aside.

  3. Back in the pan, add peppers and a bit of oil, cook until crisp-tender.

  4. Add garlic and cook for 1 minute.

  5. Add tofu and the sweet chili sauce mixture, stir and cook for 1 minute.

  6. Remove the mixture from the pan into a bowl.

  7. Back in the pan, add the cooked noodles and noodles sauce mixture.

  8. Stir and cook together for two minutes.

  9. Serve the noodles and top with the tofu and peppers mixture.

  10. Optionally top with sesame seeds.
