Saucy Noodles with Crispy Tofu

Ingredients

  • 1 cup vegetable broth
  • 3 tbsp Tamari or low sodium soy sauce
  • 1 tbsp ginger, minced
  • 1 tsp garlic, minced
  • 2 tbsp cornstarch
  • 1 tbsp Sriracha or chilli sauce
  • 2-3 tbsp maple syrup
  • Noodles
  • Tofu
  • Vegetables

Preparation

  1. Cook noodles according to package directions.

  2. Prepare crispy tofu by cooking until edges are brown and crispy.

  3. Cook vegetables until slightly softened.

  4. Add all sauce ingredients to a mixing bowl and whisk until well incorporated.

  5. Add sauce to a pan on medium-low heat and cook for 5 minutes until it thickens.

  6. Add the thickened sauce to the cooked noodles, tofu, and vegetables.
