Savory Peanut Sauce with Tofu

Ingredients

Tofu

  • 1 block of Extra Firm Tofu
  • 1 tsp Garlic Powder
  • 1/4 cup Nutritional Yeast

Sauce

  • 1 cup Vegetable Broth
  • 2 tbsp Tamari or Low Sodium Soy Sauce
  • 1 tbsp Ginger, minced
  • 1 tsp Garlic, minced
  • 3 tbsp Maple Syrup or Brown Sugar
  • 1-2 tbsp 100% Peanut Butter, creamy
  • 1 tbsp Sriracha or Chili Sauce of choice (optional)
  • 2 tbsp Cornstarch
  • Salt & Pepper to taste

Preparation

  1. Preheat oven to 400°F or heat a skillet over medium heat.

  2. Cut tofu into cubes, toss with garlic powder and nutritional yeast, then bake or fry until crispy and golden brown.

  3. In a saucepan, combine vegetable broth, tamari, minced ginger, minced garlic, maple syrup, peanut butter, and sriracha if using; bring to a simmer.

  4. Mix cornstarch with a little water to make a slurry, add to the sauce, and stir until thickened.

  5. Pour the sauce over the cooked tofu and serve immediately.
