Stir-Fried Tofu with Peanut Sauce
Ingredients
Sauce
- 1 cup Vegetable Broth
- 3 tbsp Tamari or Low Sodium Soy Sauce
- 1 tbsp Ginger, minced
- 1 tsp Garlic, minced
- 3 tbsp Maple Syrup or Brown Sugar
- 1-2 tbsp Peanut Butter, creamy
- 1 tbsp Sriracha or Chili Sauce of choice (optional)
- 2 tbsp Cornstarch
- Salt & Pepper to taste
Additional
- Tofu (prepared, quantity as desired)
- Cooked brown rice
- Green onions for garnish
Preparation
Add all ingredients to a mixing bowl and whisk until well incorporated.
Add sauce to a pan on medium-low heat and cook it for 5 minutes until it thickens.
Add tofu to pan and evenly coat in sauce.
Serve over brown rice and top with green onions.
