Stir-Fried Tofu with Peanut Sauce

Ingredients

Sauce

  • 1 cup Vegetable Broth
  • 3 tbsp Tamari or Low Sodium Soy Sauce
  • 1 tbsp Ginger, minced
  • 1 tsp Garlic, minced
  • 3 tbsp Maple Syrup or Brown Sugar
  • 1-2 tbsp Peanut Butter, creamy
  • 1 tbsp Sriracha or Chili Sauce of choice (optional)
  • 2 tbsp Cornstarch
  • Salt & Pepper to taste

Additional

  • Tofu (prepared, quantity as desired)
  • Cooked brown rice
  • Green onions for garnish

Preparation

  1. Add all ingredients to a mixing bowl and whisk until well incorporated.

  2. Add sauce to a pan on medium-low heat and cook it for 5 minutes until it thickens.

  3. Add tofu to pan and evenly coat in sauce.

  4. Serve over brown rice and top with green onions.
