Vegan Fried Rice with Tofu

Ingredients

  • 1 cup brown rice
  • 12 cups boiling water
  • cooked tofu
  • assorted vegetables

Sauce

  • 3 tablespoons tamari
  • 1 tablespoon peanut butter
  • 2 tablespoons maple syrup
  • 1 clove garlic, minced
  • 1-2 teaspoons sriracha
  • 1 teaspoon toasted sesame oil

Preparation

  1. Bring the water to a boil and add the rice.

  2. Cook for 30 minutes uncovered.

  3. Drain the rice, add it back to the pot, and cover for 10 minutes.

  4. Whisk together the sauce ingredients.

  5. Sauté the vegetables in a large pan or wok.

  6. Toss in the cooked tofu and rice.

  7. Add the sauce and heat through.
