Easy Peasy Vegan Fried Rice

Ingredients

  • 1 cup brown rice
  • Roasted tofu
  • Frozen corn
  • Frozen peas
  • Mushrooms
  • Cabbage
  • Cilantro

Sauce

  • 3 tablespoons tamari
  • 1 tablespoon peanut butter
  • 2 tablespoons maple syrup
  • 1 minced garlic clove
  • 1-2 teaspoons sriracha
  • 1 teaspoon toasted sesame oil

Preparation

  1. Bring 12 cups of water to a boil and add the rice.

  2. Cook the rice uncovered for 30 minutes.

  3. Drain the rice, return it to the pot, cover, and let it sit for 10 minutes.

  4. Whisk together the sauce ingredients.

  5. Sauté the vegetables in a large pan or wok.

  6. Toss in the cooked tofu and rice.

  7. Add the sauce, heat through, and serve.

  1. Use any vegetables you have in your fridge or freezer, such as corn, peas, mushrooms, cabbage, or cilantro.
