Easy Vegan Tempeh Bacon Wrap
Ingredients
- low carb spinach wraps
- hummus
- avocado
- shredded carrots
- purple cabbage
- black beans
- red onion
- cilantro
- lime
Tempeh bacon
- 2, 8 oz packages of unflavored tempeh
- 1/2 cup tamari
- 2 tsp liquid smoke
- 3 tbsp maple syrup
- 1 tsp cumin
- 1 tsp garlic powder
- 1/4 cup apple cider vinegar
Preparation
Prepare the marinade by combining tamari, liquid smoke, maple syrup, cumin, garlic powder, and apple cider vinegar in a ziplock bag.
Add tempeh strips to the marinade and let marinate overnight for best results.
Slice the tempeh into about 1/8 inch strips before or after marinating.
Fry the marinated tempeh in a bit of oil, such as avocado oil, until cooked and edges are crisp.
Assemble the wrap by spreading hummus on a spinach wrap, adding avocado, shredded carrots, purple cabbage, black beans, red onion, cilantro, and the cooked tempeh bacon.
Top with a squeeze of lime and serve.
Tips
Marinate overnight for the best flavor and texture.
Halve the tempeh bacon recipe if using only one package of tempeh.
