Easy Vegan Tempeh Bacon Wrap

Ingredients

  • low carb spinach wraps
  • hummus
  • avocado
  • shredded carrots
  • purple cabbage
  • black beans
  • red onion
  • cilantro
  • lime

Tempeh bacon

  • 2, 8 oz packages of unflavored tempeh
  • 1/2 cup tamari
  • 2 tsp liquid smoke
  • 3 tbsp maple syrup
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/4 cup apple cider vinegar

Preparation

  1. Prepare the marinade by combining tamari, liquid smoke, maple syrup, cumin, garlic powder, and apple cider vinegar in a ziplock bag.

  2. Add tempeh strips to the marinade and let marinate overnight for best results.

  3. Slice the tempeh into about 1/8 inch strips before or after marinating.

  4. Fry the marinated tempeh in a bit of oil, such as avocado oil, until cooked and edges are crisp.

  5. Assemble the wrap by spreading hummus on a spinach wrap, adding avocado, shredded carrots, purple cabbage, black beans, red onion, cilantro, and the cooked tempeh bacon.

  6. Top with a squeeze of lime and serve.

Tips

  1. Marinate overnight for the best flavor and texture.

  2. Halve the tempeh bacon recipe if using only one package of tempeh.
