Preparation
Cook sweet potatoes by baking in a preheated oven at 400°F after rubbing with olive oil, salt, and pepper until tender, or microwave for quicker preparation.
Mash avocados with chopped shallots, chili, cherry tomatoes, garlic, lime juice, and cilantro to make guacamole.
Incorporate black beans into the guacamole mixture.
Stuff the mixture into the cooked sweet potatoes and garnish with chili flakes before serving.
Tips
Add extra protein or toppings as desired, or omit cilantro to customize the flavor.
