Ten-Minute Quinoa Black Bean Burrito Bowl

Ingredients

Beans

  • One carton black beans, drained (reserve 3 tbsp of aquafaba)
  • 1/2 tsp chilli powder
  • 1/4 tsp cumin
  • 1/4 tsp ground coriander
  • Onion and garlic powder, to taste
  • Salt and pepper, to taste

Salsa

  • 6 large ripe tomatoes
  • One red onion, diced
  • One green chilli, diced
  • Handful coriander, chopped
  • 1 tbsp olive oil
  • Lime juice and apple cider vinegar, to taste

Serving

  • Violife Original grated
  • Cooked quinoa
  • Spinach
  • Avocado
  • Red pepper
  • Red cabbage
  • Spring onions
  • Coriander
  • Lime juice
  • Vegan sour cream (optional)

Preparation

  1. Heat the beans with the spices, seasoning to taste, and cook for a few minutes until thickened and warm.

  2. Toss together the salsa ingredients.

  3. Serve in a bowl with Original Grated, cooked quinoa and your choice of ingredients.
