Easy Plant-Based Burrito Bowl

Ingredients

Refried beans

  • 1 can black beans
  • 4-5 cloves garlic, minced
  • 2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 cup vegetable broth
  • Salt and pepper to taste

Chili lime corn

  • 1 cup frozen fire roasted corn
  • Juice of half a small lime
  • Sprinkle of chili lime seasoning

Peppers and onions

  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced

Bowl components

  • Brown rice
  • Guacamole or mashed avocado
  • Lime
  • Hot sauce

Preparation

Refried beans

  1. In a pan, add black beans and garlic and sauté until garlic is fragrant.

  2. Using the back of a cooking spoon or spatula, lightly mash beans until mostly mashed.

  3. Add vegetable broth and stir to combine, and bring to a low simmer to thicken.

  4. Stir and mash until beans are the consistency of refried beans.

Chili lime corn

  1. Reheat in microwave according to package.

  2. Squeeze fresh lime juice over top and sprinkle with chili lime seasoning.

Peppers and onions

  1. Sauté peppers and onions until soft.

  2. Add garlic and sauté until fragrant.

Assembly

  1. To assemble bowl, add in rice, corn, peppers and onions, then your refried beans.

  2. Top with mashed avocado and some hot sauce.

Tips

  1. Prep peppers and onions first then use the same pan to make the beans to save on clean up.

  2. You can prepare all the rice, beans, corn, and guacamole in advance for easy weekday meals.
